About two years ago, here at Local Community Hero’s, we took a leap forward to start providing a scholarship program to any graduating High School students in local districts. While we are ourselves are still early in the publication arena, we believe that our original cause remains incredibly important. That cause being the recognition of students and good Samaritans in San Jose, and hopefully beyond in the future. With that said, we are incredibly proud to celebrate the anniversary of our first scholarship awards in 2017 as well as the 2018 recpients on the horizon. Congratulations to Brenda Gochar, Truc Nguyen, Maria Moran, Elizabeth Rosales, and Jennifer Hernandez Garcia, our very first winners! We hope to deliver a follow up story to gain an even more inspiring perspective on the impact we have made for them. With all these things said, we hope that we have inspired anyone reading this story, as well as any entities who may feel inspired to become a part of this venture. We are more than happy to allocate our own resources into making this possible, but we are hoping there are others out there of the same warm-hearted mind as our team. Why stop at a few students when we can make a better future possible for a wider range of talent? After all, these young and talented individuals will be the work force of the future. Here at Local Community Heroes, we remain committed to changing lives. Apollo High School Serves the Community By Laurie Brant

Apollo High School is a “Small But Necessary” credit recovery school in East Side Union High School District. Junior and Senior students come from one of the 12 comprehensive schools in the district to attend this model recovery to school to help them recover credits and graduate on-time. In addition to a high school diploma, the Apollo staff works relentlessly to help students discover their college and career path. Every student that graduates from Apollo will be ready to attend higher education at community college, career training at a community college or attend the California State University system. One of the tenets of Apollo High School is for students to help students become productive and responsible citizens. To that end, Apollo has partnered with Reaching Out to bring food to our families in the community. Once a month, students volunteer to go to Reaching Out and pack grocery boxes and bag fruits and vegetables. Then, the food is delivered to Apollo and is distributed to the community. Every family receives groceries, chicken, eggs, fruits, vegetables, juice/milk and sweets. Every month has a different selection of food. It takes about 75 volunteer hours to host this once a month event. So far this year, Apollo has given away $124,000 worth of food to over 700 families and 3,000 individuals. The students enjoy the pantry and are excited to volunteer. “I enjoy helping families get the food they need” said Kiara R. and my mom is happy too, because I get to bring food home afterwards to my family too!” Apollo food pantry is open on Friday, February 9th, March 16th, April 13th and May 11th from 3:00-5:00 pm. It is closed during the summer months. Please feel free to drop by. No identification is necessary.

It’s not every day that you get to see creativity in action. A special sort of spectacle presented itself to us after interviewing our Hero of the Year from the previous issue. Carlos Rodriguez, a local artist and muralist in San Jose was leading a project on Mt. Pleasant High School’s campus to paint a design and bring new life to an otherwise bland area of the school. Workers from the non-profit “City Year” were there along with students to execute Carlos’s vision. The name of the piece is “The Sea of Infinite Creation”, and while there was much to be said about the meaning of it, what stood out to us was the welcoming and supportive feeling meant for the mural to provide for the students. In the words of Carlos himself “The message is anything you can dream of, and anything you need to draw from, it’s on the mural. So that way when they come in the school, they have this sense of belonging, being welcome, and being part of the community”. Scan the QR code above to watch the full interview. Local Community Recipe Spinach Quiche

Preparation Prep: 20 min Cook: 40 min Total Time: 1hr Preheat oven to 375 degrees F (190 degrees C). In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture. INGREDIENTS 1/2 cup butter 3 cloves garlic, chopped 1 small onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 1 (4.5 ounce) can mushrooms, drained Salt and pepper to taste

1 (6 ounce) package herb and garlic feta, crumbled 1 (8 ounce) package shredded Cheddar cheese 1 (9 inch) unbaked deep dish pie crust 4 eggs, beaten 1 cup milk

Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.
